Foolproof Vanilla Cake

A tender two-layer vanilla cake made with butter, sugar, eggs, milk, and pure vanilla extract. Finish it with the optional simple vanilla buttercream for a classic celebration cake.

Cake
  • 225 g (1 3/4 cups) All-purpose/plain flour
  • 2 teaspoons Baking powder
  • 1/4 teaspoon Fine salt
  • 170 g (3/4 cup) Unsalted butter, softened
  • 200 g (1 cup) Granulated or caster sugar
  • 3 eggs Large eggs, at room temperature
  • 2 teaspoons Pure vanilla extract
  • 120 ml (1/2 cup) Whole milk, at room temperature
Optional Vanilla Buttercream
  • 115 g (1/2 cup) Unsalted butter, softened
  • 225-250 g (about 2 cups) Powdered/icing sugar
  • 1-2 teaspoons Vanilla extract
  • 2-3 tablespoons Milk or cream
  • 1 pinch Fine salt

Method
 

Step-by-Step
  1. Heat the oven to 175°C/350°F conventional, or about 160°C/325°F fan-assisted. Grease two 8-inch/20-cm round cake pans and line the bottoms with parchment.
  2. Whisk the flour, baking powder, and salt together in a medium bowl. Set this dry mixture aside while you prepare the batter.
  3. Beat the softened butter and sugar for about 3 to 4 minutes, until pale and fluffy. Add the eggs one at a time, scraping down the bowl after each addition, then mix in the vanilla.
  4. Add the flour mixture in two or three additions, alternating with the milk. Begin and end with the dry ingredients, mixing only until the batter is combined.
  5. Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25 to 30 minutes, until the cakes spring back lightly and a skewer comes out clean or with a few moist crumbs.
  6. Cool the cakes in their pans for 10 minutes, then turn them onto a wire rack and cool completely. Do not frost warm layers, as the buttercream can melt and slide.
  7. For the buttercream, beat the softened butter until smooth. Gradually add the powdered sugar, then add the vanilla, salt, and enough milk or cream to create a spreadable consistency.
  8. Place one cooled cake layer on a serving plate, spread it with buttercream, and top with the second layer. Cover the top and sides with the remaining buttercream, then slice and serve.

Notes

For one deeper 9-inch/23-cm cake, bake for about 30 to 35 minutes and check the center carefully. Measure flour by weight when possible, or spoon it into cups and level the tops. Store the frosted cake covered at room temperature for up to 2 days, or refrigerate it if your kitchen is warm.
