  • 1 pound Ground beef, preferably 80% lean
  • 1 pound Bulk pork sausage, mild or hot
  • 1 small Small yellow onion, finely chopped
  • 32 ounces Velveeta, cut into 1-inch cubes
  • 2 10-ounce cans Ro-Tel diced tomatoes and green chilies, undrained
Seasonings
  • 1/2 teaspoon Garlic powder
  • 1/4 teaspoon Black pepper
Optional Additions
  • 1 10.5-ounce can Cream of mushroom soup
  • 1/2 cup Milk, added as needed
  • 1-2 jalapeƱos JalapeƱos, seeded and chopped
For Serving
  • 2 tablespoons Chopped cilantro or green onion
  • as needed Sturdy tortilla chips

Method
 

Step-by-Step
  1. Brown the ground beef, pork sausage, and chopped onion in a large skillet over medium heat, breaking the meat into small pieces as it cooks.
  2. Drain the cooked meat thoroughly, preferably in a colander, and wipe out the skillet if there is a noticeable amount of grease.
  3. Return the drained meat to the skillet and add the cubed Velveeta and undrained Ro-Tel tomatoes.
  4. Cook over low heat, stirring frequently, until the Velveeta is fully melted and the dip is smooth.
  5. Stir in the garlic powder and black pepper. Add cream of mushroom soup or milk if you want a softer, creamier, or thinner consistency.
  6. Transfer the hot dip to a serving bowl or slow cooker set to Warm, garnish if desired, and serve with sturdy tortilla chips.

Notes

Keep the dip warm rather than hot after it melts so the cheese and meat fat do not separate. For slow cooking, brown and drain the meat first, then heat the meat, Velveeta, and undrained Ro-Tel on Low for 1 to 2 hours, stirring every 20 to 30 minutes. Use the Warm setting for serving.
