Tiramisu Cake Recipe

A two-layer vanilla sponge cake soaked with espresso syrup and filled and frosted with mascarpone whipped cream. Finish it with unsweetened cocoa powder and optional chocolate curls for an elegant occasion dessert.

Ingredients
  

Vanilla Sponge Cake
  • 6 large eggs Large eggs, separated
  • 1 cup Granulated sugar, divided
  • 1 cup All-purpose flour, sifted
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Fine salt
  • 1 teaspoon Vanilla extract
Coffee Syrup
  • 1 1/2 cups Strong brewed espresso or coffee, cooled
  • 1/4 cup Granulated sugar
  • 2 tablespoons Coffee liqueur, Marsala, or dark rum
Mascarpone Cream
  • 16 ounces Mascarpone cheese, chilled
  • 2 cups Cold heavy whipping cream
  • 3/4 cup Powdered sugar
  • 1 teaspoon Vanilla extract
Finishing
  • 2-3 tablespoons Unsweetened cocoa powder
  • Optional Chocolate curls or finely grated semisweet chocolate

Method
 

Step-by-Step
  1. Grease two 9-inch round cake pans and line the bottoms with parchment. Heat the oven to 350°F (175°C).
  2. Beat the egg yolks with about half of the sugar until pale and thick. In a clean bowl, beat the egg whites with the remaining sugar until medium-stiff peaks form, then fold the yolk mixture and vanilla into the whites.
  3. Sift the flour, baking powder, and salt over the egg mixture. Fold gently just until combined, taking care not to deflate the batter.
  4. Divide the batter between the prepared pans and bake for 25-30 minutes. The tops should spring back lightly, and a toothpick inserted in the center should come out clean.
  5. Cool the cakes completely, about 1 hour. Stir the sugar into hot espresso until dissolved, add the optional liqueur or rum, and cool the coffee syrup completely.
  6. Beat the chilled mascarpone briefly until smooth. Separately whip the cold heavy cream, powdered sugar, and vanilla to medium-stiff peaks, then fold the whipped cream into the mascarpone in two or three additions.
  7. Level the cakes if needed and place one layer on a serving plate. Brush it gradually with coffee syrup, spread with about one-third of the mascarpone cream, add the second layer, and repeat the syrup application.
  8. Cover the top and sides with the remaining mascarpone cream. Dust with cocoa powder and add optional chocolate curls, then refrigerate for at least 4 hours or overnight before slicing.

Notes

Apply the espresso syrup gradually so the cake becomes moist without turning wet or collapsing. Keep the mascarpone and cream cold, and do not overbeat the mascarpone or whipped cream. For clean slices, chill overnight and use a warm, dry knife.
