- Cook the breakfast sausage in a large nonstick skillet over medium-high heat for approximately 5–7 minutes, breaking it into small crumbles until no longer pink. Drain excess fat thoroughly.
- Add the Simply Potatoes Diced Potatoes with Onion to the skillet. Cook for approximately 10–12 minutes, stirring occasionally, until the potatoes are hot and lightly browned.
- Whisk the eggs and milk together in a bowl until combined. Pour the egg mixture into the skillet with the sausage and potatoes.
- Cook the mixture, stirring gently, for approximately 3–5 minutes until the eggs are just set. Remove the skillet from the heat promptly so the eggs remain tender.
- Stir in the shredded Cheddar cheese and let the residual heat melt it through the filling. Taste only after the cheese has melted, since the sausage and salsa may already provide plenty of seasoning.
- Divide the potato-and-egg mixture among six flour tortillas. Add salsa, fold in the sides, and roll each tortilla into a burrito.
Notes
Drain the sausage thoroughly before adding the potatoes so the filling does not become greasy and the potatoes can brown properly. For make-ahead burritos, cool the filling before wrapping, then refrigerate briefly or freeze the burritos individually and reheat until hot.
