Ingredients

Shrimp and Casserole
  • 1 lb Medium shrimp, peeled, deveined, and rinsed
  • 4 Tbsp Butter
  • 1/2 cup Finely chopped onion
  • 1 clove Garlic, minced
  • 1 10 3/4-ounce can Condensed cream of mushroom soup
  • 1 8-ounce package Cream cheese, softened and cubed
  • 1/2 cup Dry white wine or dry sherry
  • 1/2 cup Grated Parmesan cheese
  • 1/4 tsp Salt
  • 1/8 tsp Black pepper
For Serving
  • 2 cups Hot cooked white rice
  • 2 Tbsp Chopped parsley, optional

Method

Step-by-Step
  1. Heat the oven to 350°F and lightly butter a 1 1/2- to 2-quart baking dish. Have the softened cream cheese cubed and the shrimp rinsed, peeled, and deveined before you begin.
  2. Melt the butter in a skillet over medium heat. Add the onion and cook for 3 to 4 minutes until softened, then add the garlic and cook for 30 seconds.
  3. Add the shrimp to the skillet and cook for about 2 minutes per side, just until they begin to turn pink. Do not cook them fully because they will finish cooking in the oven.
  4. In a saucepan over low heat, combine the mushroom soup, softened cream cheese, wine or sherry, salt, and black pepper. Stir gently until the mixture is smooth and hot, but do not let it boil.
  5. Fold the partly cooked shrimp and onion mixture into the warm sauce. Transfer everything to the prepared baking dish and spread it into an even layer.
  6. Sprinkle the grated Parmesan evenly over the casserole. Bake uncovered for about 20 minutes, until the sauce is bubbling and the shrimp are fully opaque.
  7. Spoon the hot Shrimp Christina over cooked white rice and garnish with chopped parsley if desired. Serve while the sauce is warm and creamy.

Notes

Keep the cream cheese softened before making the sauce, and warm the sauce over low heat without boiling. Dry sherry gives the most traditional, slightly richer flavor, while dry white wine is a suitable substitute. Avoid fully cooking the shrimp in the skillet so they remain tender after baking.
