Mexican Ranch Salad

A hearty Tex-Mex salad combining taco-seasoned ground beef, beans, corn, fresh vegetables, cheddar, ranch dressing, salsa, and crunchy tortilla chips. Serve it cold or at room temperature for a filling meal or party side.

  • 1 pound Lean ground beef
  • 1 1-ounce packet Taco seasoning
  • 1 15-ounce can Ranch-style beans or black beans, drained and rinsed
  • 1 15-ounce can Whole-kernel corn, drained
  • 8 cups Chopped romaine or iceberg lettuce
  • 2 medium Medium tomatoes, chopped
  • 1 medium Medium avocado, diced
  • 1 cup Shredded sharp cheddar cheese
  • 1/2 cup Sliced black olives
Dressing
  • 1/2 cup Ranch dressing
  • 1/2 cup Chunky salsa
Toppings
  • 2 cups Tortilla chips, lightly crushed
Optional
  • 1 tablespoon Fresh lime juice for the avocado

Method
 

Step-by-Step
  1. Brown the ground beef in a skillet over medium-high heat for 7–10 minutes, breaking it into small pieces as it cooks. Drain any excess fat from the skillet.
  2. Add the taco seasoning and the amount of water specified on the seasoning packet, usually about 1/3 cup. Simmer for 2–3 minutes, stirring occasionally, until the beef mixture thickens.
  3. Set the seasoned beef aside to cool to room temperature or until it is just warm. Do not mix very hot beef with the lettuce, because the heat can wilt the greens and make the salad watery.
  4. In a large bowl, combine the chopped lettuce, drained beans, corn, tomatoes, diced avocado, shredded cheddar, and sliced black olives. If desired, toss the avocado with 1 tablespoon of fresh lime juice to help preserve its fresh color.
  5. In a small bowl, stir together the ranch dressing and chunky salsa until evenly combined. Pour the mixture over the salad and toss gently so the vegetables remain attractive and the avocado does not become mashed.
  6. Add the cooled seasoned beef and toss again, or arrange the beef over the top for a layered presentation. Cover and chill the salad for 15–30 minutes if serving it cold.
  7. Add the lightly crushed tortilla chips immediately before serving. Toss once more very gently, or scatter the chips over each portion so they stay crisp.

Notes

For a vegetarian version, omit the ground beef and use a full 15-ounce can of black beans or ranch-style beans. Some versions add an additional 1 cup of corn or 1 cup of shredded cheese in place of the meat. Keep the dressing and tortilla chips separate until serving for the best texture, especially at a potluck.
