Ingredients

Main Ingredients
  • 1 lb (450 g) Ground beef, preferably 85–90% lean
  • 1 medium Medium onion, chopped
  • 1 clove Garlic, minced
  • 1 14–15 oz can (410 g) Diced tomatoes, undrained
  • 1 8 oz can (225 g) Tomato sauce
  • 1 4 oz can (115 g) Chopped green chiles
  • 1 cup (240 ml) Water
  • 2 cups (about 170 g) Uncooked elbow macaroni
Seasonings
  • 1 tablespoon Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 1/4 teaspoon Black pepper
Topping
  • 1 cup (about 115 g) Shredded cheddar cheese

Method

Step-by-Step
  1. Heat a large skillet or Dutch oven over medium-high heat. Add the ground beef and chopped onion, then cook for 6–8 minutes while breaking the beef into small pieces, until the meat is browned and the onion is softened.
  2. Add the minced garlic and cook for about 30 seconds, stirring constantly so it becomes fragrant without browning too much. Drain excess fat if necessary.
  3. Stir in the undrained diced tomatoes, tomato sauce, chopped green chiles, water, chili powder, cumin, salt, and black pepper. Mix thoroughly and bring the saucy mixture to a boil.
  4. Stir the uncooked elbow macaroni directly into the boiling mixture. Reduce the heat to low, cover the skillet, and simmer for about 12–15 minutes.
  5. Stir every few minutes as the macaroni cooks to prevent sticking and distribute the sauce. If the mixture becomes dry before the pasta is tender, add a small splash of water.
  6. When the macaroni is tender, remove the skillet from the heat immediately so the pasta does not become mushy. Sprinkle the cheddar cheese over the top, cover for 2–3 minutes, and serve once melted.

Notes

Use the diced tomatoes undrained and measure the water carefully because this liquid cooks the macaroni in the skillet. Taco seasoning can replace the chili powder, cumin, salt, and pepper; use 1 packet, generally about 1 oz (28 g). Leftovers can be refrigerated and gently reheated with a splash of water.
