- Slice the kielbasa into 1/4-inch rounds or thin strips, then prepare the onion and bell peppers. Stir the fajita seasoning with the 1/4 cup water in a small bowl until it forms a thin sauce.
- Heat the oil in a large skillet over medium-high heat. Add the onion, green bell pepper, and red bell pepper, and cook for 4 to 5 minutes, stirring occasionally, until they begin to soften while retaining some texture.
- Add the sliced kielbasa after the vegetables have started cooking. Cook for 4 to 6 minutes, turning or stirring occasionally, until the sausage is browned and heated through.
- Stir in the minced garlic and cook for about 30 seconds, just until fragrant. Pour in the fajita seasoning mixture and stir for 1 to 2 minutes, until the liquid lightly coats the sausage and vegetables.
- Warm the pita breads in a dry skillet, oven, or microwave until pliable. Split or open each pita, fill with the kielbasa and vegetable mixture, and finish with any desired toppings.
Notes
Brown the kielbasa after the vegetables begin cooking so the peppers and onions can soften and caramelize without taking on too much sausage fat. For a less salty result, use half a packet of fajita seasoning and add more after tasting. Warm the pitas briefly so they are less likely to split.
