Step-by-Step
  1. Heat the oven to 350°F (175°C). Grease and lightly flour a 9 x 13-inch baking pan.
  2. Whisk the flour, sugar, baking powder, and salt together in a large mixing bowl.
  3. Add the shortening, milk, and vanilla. Beat with an electric mixer for about 2 minutes, scraping down the bowl as needed.
  4. Add the eggs and beat for another 2 minutes, until the batter is smooth and evenly combined.
  5. Spread the batter evenly in the prepared pan.
  6. Bake for 30 to 35 minutes, until the center springs back lightly and a toothpick inserted in the middle comes out clean or with a few moist crumbs.
  7. Cool the cake in the pan before frosting or serving.

Notes

For the best texture, spoon flour into a dry measuring cup and level it, or weigh it when possible. Room-temperature eggs and milk help create a smoother batter. After adding the eggs, mix only until the batter is evenly combined to help keep the crumb tender.
