Easy Vegetarian Taco Soup

A comforting one-pot vegetarian soup filled with beans, corn, tomatoes, peppers, and taco-inspired spices. It is naturally vegetarian and can be made vegan by leaving off dairy toppings.

  • 1 tablespoon Olive oil
  • 1 medium Medium yellow onion, diced
  • 1 medium Medium bell pepper, diced
  • 3 cloves Garlic, minced
  • 1 tablespoon Chili powder
  • 2 teaspoons Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried oregano
  • 1 teaspoon, plus more to taste Kosher salt
  • 1/2 teaspoon Black pepper
  • 1 14.5-ounce can Diced tomatoes, undrained
  • 1 15-ounce can Tomato sauce
  • 4 cups Low-sodium vegetable broth
  • 1 15-ounce can Black beans, drained and rinsed
  • 1 15-ounce can Pinto beans or kidney beans, drained and rinsed
  • 1 15-ounce can Corn, drained
  • 1 4-ounce can, optional Diced green chiles

Method
 

Step-by-Step
  1. Heat the olive oil in a large Dutch oven or soup pot over medium heat. Add the diced onion and bell pepper, then cook for 5–7 minutes until the vegetables soften and the onion begins to look translucent.
  2. Add the minced garlic, chili powder, cumin, smoked paprika if using, oregano, kosher salt, and black pepper. Stir constantly for about 30–60 seconds so the spices bloom and coat the vegetables without allowing the garlic to burn.
  3. Pour in the undrained diced tomatoes, tomato sauce, and vegetable broth. Add the rinsed black beans, rinsed pinto or kidney beans, corn, and optional diced green chiles, then stir well.
  4. Bring the soup to a boil over medium-high heat. Once bubbling, reduce the heat and simmer uncovered for 20–25 minutes, stirring occasionally so the beans and vegetables heat evenly.
  5. Stir in the lime juice after simmering. Taste the soup and adjust the salt, pepper, chili powder, or lime juice to suit your preference.
  6. Ladle the hot soup into bowls and add the toppings you like. Serve with lime wedges, allowing everyone to add extra citrus at the table.

Notes

Use low-sodium broth and season carefully at the end because canned tomatoes, beans, broth, and taco-style spices can already contain salt. For a thicker soup, mash about 1 cup of the beans before adding them or mash a portion of the finished soup directly in the pot with a potato masher. Store cooled leftovers in the refrigerator and reheat gently on the stovetop or in the microwave.
