Easy Taco Soup Recipe

This one-pot taco soup is a filling, budget-friendly dinner made with ground beef, beans, corn, tomatoes, taco seasoning, and ranch seasoning. It is ready in about 40 to 50 minutes and makes 6 to 8 servings.

  • 1 1-ounce packet Taco seasoning
  • 1 1-ounce packet Ranch dressing seasoning mix

  • 1 15-ounce can Pinto beans, undrained
  • 1 15-ounce can Black beans, drained and rinsed
  • 1 15-ounce can Kidney beans, drained and rinsed
  • 1 15-ounce can Whole-kernel corn, undrained
  • 1 14.5-ounce can Diced tomatoes, undrained
  • 1 10-ounce can Diced tomatoes with green chiles, undrained
  • 1 8-ounce can Tomato sauce
Liquid
  • 1-2 cups Beef broth or water

Method
 

Step-by-Step
  1. Heat a large pot or Dutch oven over medium heat. Add the ground beef and diced onion, then cook for 6 to 8 minutes while breaking the beef into small pieces, until the meat is browned and the onion is softened.
  2. Drain excess fat from the pot if necessary. Stir in the taco seasoning and ranch dressing seasoning mix until the beef and onion are evenly coated and fragrant.
  3. Add the undrained pinto beans, drained and rinsed black beans, drained and rinsed kidney beans, undrained corn, diced tomatoes, tomatoes with green chiles, tomato sauce, and 1 cup of broth or water. Stir thoroughly to combine.
  4. Bring the soup to a boil over medium-high heat. Once bubbling, reduce the heat to low, partially cover the pot, and simmer for 20 to 30 minutes, stirring occasionally.
  5. Check the consistency during cooking and add the remaining broth or water if the soup becomes thicker than you prefer. Taste near the end and adjust the seasoning as needed.
  6. Ladle the hot soup into bowls and finish with your preferred toppings. Serve with shredded cheese, sour cream or plain Greek yogurt, green onions, cilantro, avocado, tortilla chips, lime wedges, or sliced jalapeƱos.

Notes

Keep the tomatoes, tomatoes with green chiles, corn, and pinto beans undrained because their liquid contributes to the soup. For a lighter version, use 93% to 99% lean ground turkey, omit the ranch seasoning, choose reduced-sodium canned goods, and use plain Greek yogurt instead of sour cream. Refrigerate leftovers promptly and reheat gently on the stovetop or in the microwave.
