Step-by-Step
  1. Preheat the oven to 350°F (175°C) and lightly grease a 9-by-13-inch baking dish.
  2. Pour both cans of undrained peaches evenly into the prepared baking dish.
  3. Sprinkle the dry yellow cake mix evenly over the peaches without stirring the layers together.
  4. Sprinkle the cinnamon and chopped pecans over the cake mix if using.
  5. Pour the melted butter slowly over the entire surface, or arrange thin butter slices across the top so as much of the dry cake mix as possible is covered.
  6. Bake for 45–55 minutes, until the topping is golden brown and the peach mixture bubbles around the edges.
  7. Let the cobbler rest for 10–15 minutes before serving warm with vanilla ice cream.

Notes

Sliced butter often gives the most even crust because it helps reduce dry patches. Peaches packed in juice make a less-sweet dessert, while peaches in heavy syrup create a sweeter, richer cobbler. Store leftovers covered in the refrigerator and reheat individual portions gently.
