- Heat the oven to 350°F. Grease an 8-inch square or similar 1 1/2- to 2-quart baking dish with butter or cooking spray.
- Drain the Rotel very well, pressing gently if needed to remove extra liquid. Whisk the eggs, milk or half-and-half, kosher salt, and black pepper in a large bowl until evenly combined.
- Stir the drained Rotel and about three-quarters of the cheddar into the egg mixture. Add cooked, drained sausage or bacon and any optional garlic powder or green onions.
- Pour the mixture into the prepared baking dish and spread the ingredients into an even layer. Sprinkle the remaining cheddar over the top.
- Bake for 30 to 40 minutes, until the center is set, the top is lightly browned, and the center reaches about 160°F. Remove the casserole and let it rest for approximately 5 minutes before slicing.
Notes
Drain the Rotel thoroughly to help prevent a watery bake, and avoid overbaking because the eggs continue cooking briefly after removal from the oven. Use half-and-half for a richer, softer texture, or brown and drain sausage separately before adding it.
