Easy Chocolate Lava Cake

Ingredients
  

For the Ramekins
  • 1 tbsp Unsalted butter, softened (for greasing)
  • 1 tbsp Unsweetened cocoa powder (for dusting)
Main Ingredients
  • 1/2 cup (113 g) Unsalted butter, cubed
  • 6 oz (170 g) Semisweet or bittersweet chocolate, 60%–70% cacao, chopped
  • 3/4 cup (90 g) Powdered sugar
  • 2 Large eggs
  • 2 Large egg yolks
  • 1 tsp Pure vanilla extract
  • 1/2 tsp Instant espresso powder (optional, boosts chocolate flavor)
  • 1/4 tsp Fine sea salt
  • 1/4 cup (30 g) All-purpose flour
To Serve (Optional)
  • 4 scoops Vanilla ice cream
  • 1 cup Fresh raspberries or sliced strawberries
  • 1 tbsp Powdered sugar for dusting

Method
 

Step-by-Step
  1. Prep the pans: Heat oven to 425°F (220°C). Generously butter four 6-ounce ramekins, then dust with cocoa, tapping out the excess.
  2. Melt chocolate and butter: Place butter and chopped chocolate in a heatproof bowl set over barely simmering water. Stir until smooth, then remove from heat.
  3. Mix in dry sweetener: Whisk in powdered sugar until glossy and combined.
  4. Add eggs: Whisk in eggs and yolks until the batter looks thick and shiny. Stir in vanilla, espresso powder if using, and salt.
  5. Fold flour: Sprinkle flour over the top and fold gently just until incorporated. Do not overmix.
  6. Fill and rest: Divide batter among ramekins, filling each about 3/4 full. Let stand 5 minutes to settle bubbles.
  7. Bake: Set ramekins on a baking sheet and bake 11–13 minutes until edges are set and centers still jiggle. Tops will be puffed with soft centers.
  8. Unmold: Cool 1 minute. Run a thin knife around edges, invert onto plates, and lift off the ramekins.
  9. Serve: Dust with powdered sugar and add ice cream and berries. Serve immediately for peak lava flow.

Notes

Use good chocolate in the 60%–70% range for the best balance of sweetness and depth. If baking from chilled batter, add 1–2 minutes. For extra flow, underbake by 30 seconds; for a fudgier middle, add 30–60 seconds. Cakes are best right away but can be reheated for 10–15 seconds in the microwave. To make ahead, fill ramekins, cover, chill up to 24 hours, then bake straight from the fridge.
