Easy Black Bean Burritos

  • 4 8-inch tortillas Large flour tortillas
  • 1 15-ounce can Black beans, drained and rinsed
  • 1/2 cup Salsa, plus more for serving
  • 1/2 cup Cooked white or brown rice
  • 1/2 cup Shredded cheddar or Monterey Jack cheese
Seasonings
  • 1/2 teaspoon Ground cumin
  • 1/2 teaspoon Chili powder
  • 1/4 teaspoon Garlic powder
  • 1/4 teaspoon, or to taste Salt
As Needed
  • 1 tablespoon Water or broth
Optional Fillings and Toppings
  • 1/4 cup, chopped Fresh cilantro
  • 1/2 sliced or diced Avocado
  • 1/4 cup, chopped Onion
  • 1/2 cup, canned or frozen Corn

Method
 

Step-by-Step
  1. Drain and rinse the black beans. Add them to a small saucepan or skillet with the salsa, cumin, chili powder, garlic powder, and salt.
  2. Mash about one-third to one-half of the beans with a fork or potato masher. Leave the remaining beans whole for a pleasant contrast of creamy and hearty textures.
  3. Warm the bean mixture over medium heat for 5–7 minutes, stirring occasionally. Add 1 tablespoon of water or broth if the mixture becomes too thick.
  4. Warm the tortillas briefly in a dry skillet, microwave, or oven until flexible. Do not let them become crisp, since pliable tortillas fold more easily.
  5. Divide the rice, warm bean mixture, cheese, and optional fillings among the tortillas. Keep the filling slightly below the center and leave several inches around the edges.
  6. Fold the sides inward, then roll each tortilla tightly from the bottom to enclose the filling. Serve immediately, or place seam-side down in a lightly oiled skillet and cook for 2–3 minutes per side.

Notes

Mash part of the beans to help bind the filling, and avoid overfilling the tortillas. Serve with extra salsa, sour cream, lime juice, shredded lettuce, or hot sauce. Refrigerate leftover burritos and reheat until hot.
