- Shred or finely chop 1 cup of fully cooked chicken. If using leftovers, warm the chicken slightly so it is not cold when the quesadillas are assembled.
- Core and thinly slice or finely chop the apple. Toss the chicken and apple together with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
- Place two tortillas on a work surface. Divide the chicken-apple mixture between them, spreading it over one half of each tortilla while leaving a small border.
- Sprinkle 1/2 cup shredded sharp cheddar over the filling on each tortilla. Fold each tortilla in half to cover the filling.
- Heat 1 tablespoon butter or oil in a large skillet over medium to medium-low heat. Cook the quesadillas for about 2 to 3 minutes per side, turning when the underside is golden and the cheese is beginning to melt; add the remaining butter or oil as needed.
- Remove the quesadillas from the skillet and let them rest for 1 minute. Cut into wedges and serve hot with salsa, sour cream, or apple chutney.
Notes
Choose a firm, slightly tart apple such as Granny Smith, Honeycrisp, or Pink Lady. Pat especially juicy apple slices dry before assembling, and cook over medium-low heat so the cheese melts before the tortilla becomes too dark.
