Dairy Queen Ice Cream Cake Recipe

A mini six-inch copycat ice cream cake made with chocolate and vanilla ice cream, a chocolate-cookie crust, and a fudgy cookie crunch center. The cake is finished with whipped topping and chocolate decorations.

Cookie Crust
  • 12 cookies Chocolate sandwich cookies, divided
  • 2 tablespoons (28 g) Unsalted butter, melted
Ice Cream Layers
  • 2 cups (about 1 pint) Chocolate ice cream, slightly softened
  • 2 cups (about 1 pint) Vanilla ice cream, slightly softened
Fudge-Crunch Center
  • 1/2 cup Prepared hot fudge sauce, cooled but still spreadable
  • 1/2 cup Finely crushed chocolate sandwich cookies
Decoration
  • 1 cup Prepared whipped topping or lightly sweetened whipped cream
  • 2 tablespoons Chocolate sprinkles or chocolate curls
Optional Decoration
  • 2 tablespoons Chocolate ganache or additional hot fudge for drizzling

Method
 

Step-by-Step
  1. Line a six-inch springform pan with parchment paper, adding a parchment or acetate strip around the inside edge if desired. Crush eight sandwich cookies into fine crumbs, mix them with the melted butter, and press firmly into the pan; freeze for 15–20 minutes.
  2. Soften the chocolate ice cream until spreadable but still firm enough to hold its shape. Spread it evenly over the chilled crust and freeze for about 30 minutes.
  3. Stir the cooled hot fudge sauce together with the 1/2 cup finely crushed cookies. Spread the fudge-and-cookie mixture over the chocolate ice cream in an even layer.
  4. Soften the vanilla ice cream until spreadable, then spoon it over the fudge-crunch center and smooth the top. Cover the pan and freeze for at least 4–6 hours, preferably overnight, until completely firm.
  5. Remove the frozen cake from the springform pan and peel away the parchment or acetate. Frost the top and sides with whipped topping or lightly sweetened whipped cream, then decorate with sprinkles, cookie crumbs, chocolate curls, or optional fudge.
  6. Let the cake stand at room temperature for 10–15 minutes before slicing. Warm a sharp knife under hot water, dry it carefully, and cut immediately; rewarm and dry the knife between slices for clean layers.

Notes

Keep the ice cream slightly softened, never runny, and freeze each layer before adding the next. Store the covered cake in the freezer and use it within about one week for the best texture.
