- Season the chicken lightly with salt and black pepper. Prepare the onion, garlic, jalapeno, cilantro, lime, and tortilla strips before you begin so the cooking process stays organized.
- Warm the olive oil in a large soup pot or Dutch oven over medium heat. Add the diced onion and cook for 4 to 5 minutes, stirring occasionally, until softened.
- Add the minced garlic and jalapeno, then cook for 30 to 60 seconds until fragrant. Stir in the cumin, chili powder, and oregano and toast for about 30 seconds.

Notes
Chicken thighs give the soup a richer, more forgiving texture, while chicken breasts work well when carefully cooked to 165°F. To use rotisserie chicken, replace the raw chicken with approximately 3 cups of shredded cooked chicken and add it during the final 5 to 10 minutes. Keep tortilla strips separate until serving so they stay crisp. Refrigerate leftover soup in a covered container and reheat gently on the stovetop or in the microwave.
