  2. Beat the eggs, vegetable oil, granulated sugar, and vanilla extract together in a large bowl until the mixture is thoroughly combined.
  3. In a separate bowl, whisk or sift together the all-purpose flour, baking soda, salt, and ground cinnamon so the dry ingredients are evenly distributed.
  4. Add the dry mixture to the egg mixture and stir just until the ingredients come together. The batter will be thick, so avoid mixing longer than necessary.
  5. Fold in the chopped apples and walnuts gently, distributing them throughout the batter without crushing the apple pieces.
