- Grease and flour a 10- to 12-cup Bundt pan thoroughly, or coat it with baking spray that contains flour.
- Add the cake mix, instant pudding mix, eggs, sour cream, oil, water, and vanilla to a large mixing bowl. Beat on low speed until the ingredients are combined, then beat on medium speed for about 2 minutes, scraping down the bowl as needed.
- Fold in the chocolate chips or chopped nuts if using. Spread the batter evenly in the prepared Bundt pan.
- Bake at 350°F (175°C) for 45–55 minutes. The cake is ready when it is golden and a skewer inserted into the thickest part comes out clean or with a few moist crumbs.
- Let the cake cool in the pan for about 15 minutes. Turn it out onto a wire rack and allow it to cool completely.
- For the glaze, whisk the confectioners’ sugar with 1–2 tablespoons milk and 1/2 teaspoon vanilla until smooth. Drizzle it over the fully cooled cake, or dust the cake with confectioners’ sugar instead.
Notes
Use instant pudding mix rather than cook-and-serve pudding. Room-temperature eggs and sour cream blend more evenly, and the cake should be removed as soon as the tester shows a few moist crumbs so it stays tender.
